Our recipe of the week is a PERFECT dish on days like this.
I saw this on Chocolate Covered Katie’s blog, and it is DELICIOUS (I just added a couple of modifications)!
(by the way, we have a VERY special upcoming “Project” I’ve been working on, and Katie has graciously donated one of her best recipes to our recipe book. If you haven’t had a chance to check out her site, you definitely need to!)
- 1 medium onion, chopped
- 2 red peppers, chopped
- 1 green pepper, chopped
- 3 Tbsp minced garlic
- ½ lb eggplant, cubed
- 1 large can tomatoes (or sub fresh ones)
- 1 ½ lb zucchini, sliced
- 3 tbsp lightly chopped fresh basil
- 1 & 1/4 tsp Kosher or Sea Salt
- 1/8 tsp freshly ground black pepper
- 1-2 Tbsp. Coconut Oil for Sauteing
Sauté all the ingredients in the coconut oil until the veggies are tender. That’s IT! Serve and enjoy this super-healthy and delicious meal!
